Dinner

I am lucky to have a husband who will help out with the cooking and housework. He will make me breakfast (it may be the afternoon, but who cares). He will go outside in the freezing early snowy morning and shovel me a path and start the truck and get it cleaned up. Although, he doesn't when the car is working (hmmm). When talking to a co-worker, I realize that I am lucky. I feel lucky for other reasons also. But; I do have to put up with a couple of things that other women will not put up with. We can't have everything, I guess. But, I feel like the important things in life are right. Today, after my husband got the truck ready for me for work this morning, he put the ingredients together in the crockpot for a chili. (Which he was supposed to do yesterday, oh well). Creamy Potato Soup

Recipe History:  The original recipe came from Taste of Home magazine. This is probably a modified version of it as I have made it so many times without following a recipe. Ingredients: Potatoes Carrots Celery Onions Water For Creamy Sauce: Butter, 1/2 stick 2 or 3 TBS, Flour Salt & Pepper 2 Cups Milk Directions: I can't give you measurements or amounts because I make a big pot. I just start chopping the potatoes, carrots, celery, and onions; throw it in the pot to see if it fits, adjust accordingly. Fill pot with water and cook until the vegetables are done. When you drain the water out of the pot, you need to save the broth. I put a large bowl or another large pot in the sink, put the strainer in that and then drain the vegetables in the strainer. Bring the pot back to the stove and melt your butter and onions until the onions are tender. Be careful that you don't burn the butter. For a stockpot, I use a whole stick of butter. Mac & Cheese with Ham

Yesterday, my son wanted mac & cheese for supper. I had some ham I wanted to use also that had been in the fridge since the day before and husband suggested to put that in it. So that is what we did and it was delicious.  While preparing it, I decided to snap some pics and blog about it. This is my first post on my new dot com address and paid for hosting. I am coming up in the world. If only I had the readers, right. Oh well. It's their loss (or gain). While preparing it, I was watching my 3 year old granddaughter. That was a challenge! lol. But, we had some laughs when the onion dropped and rolled across the floor and a plate crashed to the floor.  I LMAO when she said, "Jesus Christ!" It was hilarious. Green Smoothie

So, on my quest to eat healthier, I found this smoothie recipe on Pinterest. Love that site! I decided to just buy the coconut milk. Because I don't have all day to make homemade and besides it would have been cheaper. So, that's what I did. But, I bought everything else as stated. Since then, I have swapped the organic yogurt for Greek yogurt and baby spinach for regular spinach. Again, it was cheaper. Also, I have added flax seed meal and honey. Although, you don't even notice the honey. I have added those last two because they are "fat releasing foods." The original recipe is from the blog, Flour on my Face . On Tuesday, I made supper, baked chocolate banana bread, and shopped, etc. etc. I don't make supper often because my kids are grown and I work the evening shift several nights a week. Plus, on my day off, I'm just plain tired and have too much other stuff to do. I usually just throw something in the crockpot if I do cook. But then it was my Treat Day at work. We just started this at work. Once a month a co-worker in our department brings in a treat. It was my day on Wednesday so I HAD to bake something. Plus, my husband took out some meat so I HAD to cook it also. Anyway, I got the chocolate banana bread recipe from Pinterest. My coworkers loved it! So did I and it was easy. Which if I'm cooking or baking, EASY is a requirement.
